Not Your Tutu’s Figgy Pudding!
‘Tis the season for festive treats, and with our Brown Turkey and Kadota Figs fruiting, we’re feeling inspired to bake up a fresh spin on a traditional classic! So forget Tutu’s Figgy Pudding, because we’re taking this holiday dessert to a whole new level!
Ingredients
1 stick room-temp unsalted butter
2 large eggs
1 cup molasses
2 cups dried figs, finely chopped
1/2 teaspoon lemon zest
1 cup buttermilk
3/4 cup macnuts, finely chopped
2 1/2 cups all-purpose flour
1/2 teaspoon baking soda
2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
Whipped cream
(Makes 12 servings)
Directions
Preheat oven to 325°F.
In a stand mixer, beat the unsalted butter until fluffy.
Beat again, adding in the 2 eggs and cup of molasses
Add the 2 cups of figs, 1/2 teaspoon of lemon zest, 1 cup of buttermilk, and 1/2 cup of macnuts. Be sure to save the remaining macnuts. Mix for 1 minute.
Add the 2 1/2 cups of flour, 1/2 teaspoon of baking soda, 2 teaspoons of baking powder, 1 teaspoon of salt, 1/2 teaspoon of cinnamon, and 1/4 teaspoon of nutmeg. Mix until everything is fully incorporated.
Grease and flour an 8 x 4-inch soufflé dish or 8-inch square baking dish. Pour in the batter, allowing it to settle evenly. Top the batter with the remaining macnuts.
Bake at 325°F for 1 hour. After 1 hour, test with a toothpick. If the toothpick comes out clean, it’s ready!
Scoop the pudding out onto plates or cut it into pieces. Garnish with whipped cream.
